Why wouldn’t you want a Pumpkin Chocolate Chip Protein Cookie in under 5 minutes?? We grabbed this recipe from @TheProteinChef and made it LyfeFuel friendly, added some vegan options, and damn, we have to admit it’s pretty awesome!

2 Tbsp Almond Flour
1 Tbsp Coconut Flour (or Oat Flour)
1 Tbsp Stevia or other sweetener
1/2 Tsp Ground Cinnamon
1/2 Scoop LYFE Fuel Daily Essentials Vanilla Chai
1 Tsp Vanilla Extract
1/8 Cup Unsweetened Apple Sauce
1/8 Cup Pure Pumpkin
1/2 Tablespoon Melted Butter (or Vegan Butter)
1/4 Teaspoon Xanthan Gum
Chocolate Chips or Cacao Nibs (vegan) Optional

So simple, mix all ingredients together in a bowl and you will come up with a sticky consistency. Place a piece of waxed paper on a plate, and shape your cookie with your hands. Don’t forget the Xanthan Gum which can be purchased in tiny packets for like $.50 or in a huge box for $10. Microwave your cookie for about 90 seconds and then allow to cool. So easy!
